Chicken and Mozzarella Salad

Ingredients
Chicken Breast 170 g
Mozzarella Cheese 60 grams
Romaine Lettuce 1 cup
Baby spinach 1/2 cup
Red Onion 1/4 cup
Tomatoes, Red, Ripe 1/3 cup
Olive Oil 2 tsp
Cooking Instructions
1. Pre-heat the oven to 200 C.
2. Coat the chicken in 1 tsp of olive oil and season with a little salt and pepper. Wrap in foil and place in the oven to bake for 35 minutes.
3. To make the salad, combine the lettuce, spinach, red onion, and tomato, and drizzle over 1 tsp of olive oil. Slice the chicken and place on top of the salad. Tear the mozzarella and scatter over the top.
